Learning Objectives and an introduction to Food Safety and Hygiene - Food Safety and Hygiene are terms commonly used;
here we will look at how they relate to food that has been prepared and served.

Why Food Safety is important - This section looks at the consequences of poor food safety and hygiene and causes of food borne illness.

Food Safety Hazards and Contamination - This section explores contamination of food by food safety hazards; what they are,
where and how they arise and the practical activities to prevent and control hazards.

Personal hygiene - This section looks at why personal hygiene is so important when working with food - from cleanliness,
thorough hand washing and keeping a clean and tidy appearance.

Hygienic premises and Equipment - This section looks at the importance of keeping everything clean and tidy, such as good housekeeping,
cleaning and maintaining pest free conditions.
Target Audience
It is intended for anyone working in catering and for those who are preparing to work in the catering industry.
This includes people wanting to work in hotels, cafes, bars, restaurants, kitchens, fast food outlets, and catering in hospitals or schools.
It is ideal as induction training and will benefit anyone working in a situation where there is
food and drink but is not involved with food preparation.

Course Overview
This module is a self-study course which aims to introduce you to the basic principles of Food Safety and Hygiene.
It is intended for anyone working in catering and for those who are preparing to work in the catering industry.
This includes people wanting to work in hotels, cafes, bars, restaurants, kitchens, fast food outlets, and
catering in hospitals or schools. It is ideal as induction training and will benefit anyone working in a
situation where there is food and drink but is not involved with food preparation.
Upon completion of this online training material learners will sit an online test and on successful completion
will be able to download a Virtual College Level 1 Food Hygiene certificate.
The training and test usually take approximately 2 hours to complete (depending on learning speed). Learners are
required to achieve a 75% pass mark, and if necessary, may resit the test at no extra cost, having revisited the
training material. As an e-learning module you can complete this training in convenient stages and revisit
whenever you wish. The system will record your progress throughout.
